Enzymatic coagulation cheese made with raw goat's milk. This cheese has a firm and semi-hard texture, with a certain elasticity. Intense, persistent, very clean flavour. Fruity and lactic at the beginning and a very elegant acidity, all mixed with notes of malted cereal.
