Sea spray and camomile
Chipiona is best known for its Moscatel, but the Finos enjoy a similar climate to neighbouring sanlucar and offer a fresher, brighter style than the brinier wines of Jerez. This is a wonderfully light, vivid fino with a whisper of cammomile and white tea that is dangerously drinkable. Made for languid days of sunshine, it is a holiday in a copita.
Served chilled (but not too chilled) as an aperitif.
