Although Freixenet and Codorniu dominate Cava like a colossus, there are many great artisan cavas out there, and this, from vineyards near Valencia, is one of them. Bone dry, crisp and thirst quenching, this spends 12 months on lees to give a lightly biscuity edge to the dominant flavours of green apple and lemon zest.
